You should also keep a closer eye on the potatoes during the cooking period. I like to take them out and give them a gentle prod with a fork roughly every 15 minutes towards the end. If the fork doesn’t go in easily, then the potatoes may be drying out too quickly and you should take them out of the smoker.
Once the potatoes are done smoking, remove them from the smoker and allow them to cool for a few minutes before serving them warm with your favorite toppings.
